Thaya Winery in Havraníky near Znojmo is for me one of those places I would love to return to: superb accommodation, vineyards all around and excellent food. I was here as a guest of Amazing Places and we also went for bike rides around the area. The hotel stands on the edge of Podyjí National Park and combines architecture, wine and good food.
What is Thaya and what makes it special?
The hotel is part of the Thaya winery, which has vineyards all around the site. The architect Jakub Cigler designed the complex as a Moravian village: the heart of it is a former granary from the 1960s, surrounded by other buildings, and the undulating roof is meant to recall the waves of the Dyje river and the surrounding hills. The ceiling is made of wooden trusses and traditional bobrovky (beaver-tail roof tiles), and through brick and Austrian timber the Czech and Austrian sides are brought together here, because the Dyje is called the Thaya on the Austrian side.
How is the accommodation at Thaya laid out?
The hotel has two buildings, which you choose according to what you want. The rooms in the courtyard building are right by the winery yard, so during the grape harvest you watch the bustle from the window. If you want quiet, choose a room with a view of the garden. The other building offers apartments in vaulted houses sunk into the slope: some people are reminded of a hobbit village, others of wine cellars. Both are outdoor-style accommodation with their own entrance.
- every room has its own bathroom and airy modern furnishings
- the rooms have brick flooring, dark green panelling and a pink armchair
- breakfast from the Apri restaurant is usually included
What is the cuisine like at the Apri restaurant?
Apri means wild boar in Latin, which is a symbol of Podyjí and of the winery brand. The cuisine is based on traditional recipes in a more modern form: game from local forests, meat from Czech farms and local freshwater fish, flavoured with herbs from the site. Every dish is paired with Thaya wine, and there is also a tasting menu with wine. Dogs are not allowed in the restaurant.
According to the summer à la carte menu (July 2026) the cuisine is modern, but with honest foundations. Among the starters you will find, for example, aged beef tartare or char carpaccio with fermented strawberries, and among the mains striploin, chicken supreme, pork tenderloin in puff pastry, char with herbs from the Kolář farm or vegetarian spätzle (small dumplings) with kale pesto. There are also soups, cheeses and cured meats, and desserts such as honey cake or white chocolate mousse. Main courses on the menu run roughly from 390 to 630 CZK (about EUR 16 to 25), and the staff will advise you on wine. The menu changes with the season, so check the current version on the website.
For breakfast you can choose a buffet or à la carte. On the terrace a green parrot joined us at breakfast.
Does Thaya have its own vineyards?
Yes. The winery farms roughly 105 hectares of its own vineyards around Havraníky and in the surrounding villages of Hnanice, Šatov, Vrbovec and Dyjákovičky. The vineyards border Podyjí National Park, and the Dyje river here, thanks to its thermoregulation and the cold winds from the Vysočina highlands, gives the wines a spicy taste. Grüner Veltliner (Veltlínské zelené), Sauvignon and Riesling do best here.
The basic ranges mature in stainless steel tanks, but the main passion is oak barrels from France and Austria. In 2023 Thaya won the Winery of the Year competition in the Medium-sized Winery category and was also the overall winner. The wine is looked after by the oenologist Jakub Smrčka, who was named oenologist of the year in 2021, together with the vine grower Petr Fila.
Where to cycle from Thaya?
The area is made for cycling. As a guest of Amazing Places I rode a loop of about 20 to 30 kilometres (12 to 19 miles) between the vineyards, and we visited a few cellars. I can no longer find the exact route, but I recommend it. For inspiration you can use wine routes from the Znojmo region, for example the loop of the event Tour de burčák (burčák is young, partly fermented wine), which leads through Havraníky, Hnanice and Šatov and offers a shorter and a longer variant.
The first time I "tested" the cellars after a ride on Specialized bikes (post), the second time we came back for an Amazing Places party in a cellar (post). The winery has the profile @thaya_vinarstvi.
What is nearby?
- Podyjí National Park, about two kilometres (1.2 miles) to the entrance gate
- wine tourism and cycle paths between the vineyards
- Znojmo and its underground passages
